If you love traditional chinese walnut cookies (核桃酥, Hup Toh Soh), this is a simple recipe for you. The ingredients are simple, no electric mixer is needed, you can whisk up everything by hand, shape them and they are ready to go into the oven. This is a quick and easy traditional walnut cookie which is crumbly with beautiful nutty flavor.

Tips:

  • This recipe yields 400g cookie dough, make 15 cookies with 26g dough each. Bake with 40cm x 30cm baking tray.
  • After removing the cookies from the oven, allow to cool completely on a cooling rack before storing.
  • This small batch of cookies use only 40g of walnut, pan roast the walnuts will be easier than using an oven.
  • Baking times and temperatures are for reference; adjust accordingly depending on individual oven.

Yield: 15 pieces of cookie

Ingredients:

Ingredients (A):

  • 150 g low protein flour (cake flour)
  • 1¼ tsp of baking powder
  • ⅛ tsp fine salt

Ingredients (B):

  • 40 g walnut
  • 40 g salted butter (room temperature)
  • 40 g oil
  • 100 g fine sugar
  • 30 g egg (beaten, about half medium size egg)

Egg wash: 15 g beaten egg


Instructions:

1 Combine 150 g low protein flour, 1¼ tsp of baking powder and ⅛ tsp fine salt, sift the flour mixture twice to incorporate and distribute the salt and baking powder evenly.

2 Coarsely chop 40 g walnut.

3 Pan roast chopped walnut with a dry pan over medium heat. Stir constantly with a spatula until fragrant or lightly brown. This recipe uses small amount of walnut, it should take about 2-3 minutes of toasting, set aside to cool.

4 Add walnut to a food processor/dry mill, mix with some flour mixture, about the same amount of flour from instruction 1. Adding flour will help keep the nut dry so that it can be ground finely without turning to paste.

5 Combine walnut with the flour mixture, press any lumps with a spatula to break them up, mix until well blended.

6 Combine 40 g salted butter, 40 g of oil, 100 g fine sugar and 30 g egg, whisk for about 1½ minutes until light and fluffy.

7 Mix in dry ingredients, fold with a spatula until dough forms.

8 Wrap the cookie dough with cling wrap and rest for 15 minutes.

9 Cookie dough is about 400 g, divide into 15 portions with 26 g each, arrange on a baking tray lined with parchment paper.

10 Roll each dough into ball-shaped and flatten slightly, press the cookies dough with your thumb to create a hollow center.

11 Brush with egg wash.

12 Bake in preheated oven at 170°C (340°F) for 24 minutes.

13 Allow the cookies to cool on a cooling rack for 1 hour after removing from oven.
