Banana Huat Kuih
Easy to make, soft and fluffy Banana Huat Kuih, it is eggless and no artificial flavouring added. Rice flour is used to replace part of plain flour to help the huat kuih blooming well.

200 g ripe bananas 110 g soft brown sugar 200 g full cream milk 50 g rice flour 200 g plain flour 4 tbsps corn oil or other vegetable oil 1 tsp baking powder ¾ tsp baking soda
Mash bananas with fork. Add in soft brown sugar and milk, mix well.
Combine rice flour and plain flour, sift into mixture, mix until combined. Add in corn oil, mix until combined.
Bring the water of steamer to the boil.
Take out a few tablespoons of batter, sift in baking powder and baking soda, mix well. Add to the remaining batter, mix until well blended.
Line 8 baking cups (7.5-cm) with cupcake liners, then pour batter into each cup.
Arrange baking cups in steamer rack, steam over medium-high heat for 18 minutes.
Unmould Banana Huat Kuih when slightly cool down, then cool completely on wire rack. Put into container with cover for storage.
