Chocolate Lava Cake-with Bitter Sweet & Dark Chocolate
Chocolate lava cake is a very simple recipe, the secret is not to over-bake the cake. If you are a chocolate lover, you will definitely love this chocolate-rich cake!
Grease the inner part of the molds (Volume: 80 ml, Width=7.5 cm, Depth=3 cm) with butter, then coat with cocoa powder (or plain flour), and discard any excess.
Preheat oven to 200°C/390°F。
Combine chocolate and butter in a mixing bowl, heat until melted using double boiler method, mix well.
Combine eggs, sugar and salt in a mixing bowl, beat the egg mixture until thick and pale yellow.
Add in vanilla essence and low protein flour, mix well.
Add in melted chocolate mixture gradually, mix until well combined.
Pour the batter into prepared moulds, bake at 200°C for 8 minutes. (Reminder: If you use bigger moulds to make 6 cakes, increase the baking time to 10 minutes. Do not over-bake, or you will have only chocolate cakes without the melting lava.)
Chocolate Lava Cake is done!
To unmould, run a knife around the edges, then invert onto a serving plate.
