Agar-agar jelly is kids’ favorite dessert, it is also a must-have dessert for any occasion or birthday party. This is a very simple brown sugar agar-agar recipe, yet a delicious one.
Add agar-agar powder, salt, sugar, and pandan leaves to plain water (NOT hot water) and mix well, then bring to a boil.
Reduce to MEDIUM heat and continue cooking until agar-agar powder has fully dissolved.
Beat the egg gently, then add to coconut milk and mix well.
Reduce to LOW heat, add in coconut milk-egg mixture gradually, and keep stirring while adding.
Bring to the boil again, then OFF the heat.
Pour the brown sugar agar-agar mixture into a square or rectangle mold (with a 2-liter capacity), and set aside to cool completely.
When cooled, cover with aluminum foil (or cling wrap) and chill for a few hours until brown sugar agar-agar has fully set.
