Chocolate lava cake is a very simple recipe, the secret is not to over-bake the cake. If you are chocolate lover, you will definitely love this chocolate rich cake!

Bitter Sweet Dark Chocolate Lava Cake | MyKitchen101en
Ingredients for coating: butter, cocoa powder
- 120 g dark cooking chocolate
- 50 g bittersweet cooking chocolate
- 110 g butter
- 3 eggs (size: grade A/Large)
- 50 g fine sugar
- pinch of fine salt
- 1/4 tsp vanilla essence
- 2 tbsps low protein flour (cake flour)
1 Grease the inner part of the moulds (Volume: 80 ml, Width=7.5 cm, Depth=3 cm) with butter, then coat with cocoa powder (or plain flour), discard any excess.
2 Preheat oven to 200°C/390°F。
3 Combine chocolate and butter in a mixing bowl, heat until melted using double boiler method, mix well.
4 Combine eggs, sugar and salt in a mixing bowl, beat the egg mixture until thick and pale yellow.
5 Add in vanilla essence and low protein flour, mix well.
6 Add in melted chocolate mixture gradually, mix until well combined.
7 Pour the batter into prepared moulds, bake at 200°C for 8 minutes. (Reminder: If you use bigger moulds to make 6 cakes, increase the baking time to 10 minutes. Do not over-bake, or you will have only chocolate cakes without the melting lava.)
8 Chocolate Lava Cake is done!
9 To unmould, run a knife around the edges, then invert onto a serving plate.
