This is a recipe for Asian-style cream-based walnut sweet soup, it is creamy and smooth with rich and nutty walnut flavor.
Walnut sweet soup is a cream-based dessert that is easy to make. Raw walnut is oven-toasted to bring out the mild nutty smell of walnut and add a rich depth of flavor to the soup. Rice flour is used in this recipe to thicken the soup. Make sure to stir constantly when heating the soup to avoid the thick soup from burning or sticking to the bottom of the pot.

Walnut Sweet Soup Dessert Recipe | MyKitchen101en
Yield: 3 servings
Ingredients:
- 150g raw walnut
- 15g rice flour
- 1 Tbsp oil
- 600g water
- ⅛ tsp salt
- 60g brown sugar
- 50g evaporated milk
Instructions:
1 Preheat oven to 160°C (320°F).
2 Place walnuts on a mesh strainer, wash and rinse raw walnuts.
3 Spread walnuts in even layer on a baking tray. Bake in a preheated oven at 160°C (320°F) for 15 minutes or until golden brown. Set aside to cool.
4 Add walnut and rice flour to a food processor, process the walnut until they are fine and evenly grounded.
5 Add 200 g of water and 1 Tbsp oil, process walnut with high speed to a smooth paste.
6 Add the rest of the water to the paste, and blend until it is completely smooth, blending time is about 2 minutes depending on the power of your appliance.
7 Sieve the mixture with a fine strainer.
8 Sieve again before pouring into a cooking pot.
9 Mix in salt, brown sugar and evaporated milk, stir constantly and bring the mixture to boil on medium heat. Off the heat right after boiling.

Can I ask what we can replace with evaporated milk? Does normal milk works or coconut ?
You may try with coconut milk, but not sure how is the taste.
