This is a very simple coconut milk brown sugar agar-agar recipe, yet a delicious one. Agar-agar jelly is kids’ favorite dessert, it is also a must-have dessert for any occasion or birthday party. Just combine and cook all ingredients in a cooking pot and pour into a mold, the jelly will automatically divide into 2 layers when cooled.

Agar-agar

Agar-agar is a gelatinous substance that forms a solid gel in the presence of hot water. It’s made from seaweed and is used to make desserts and puddings, or as a vegetarian alternative to gelatin. Agar-agar is made by boiling seaweed with water. The resulting substance which looks like translucent jelly is dried into sheets and then ground into powder.

Fresh Coconut Milk

Coconut milk is made from the flesh of coconuts. It is suggested that you use FRESH coconut milk for this recipe as the canned or boxed coconut milk may not yield the same result as they are usually loaded with a binder. The binder will prevent the separation of water and oil, thus you won’t have 2 layers when the agar-agar has set.

Making fresh coconut milk is relatively easy. The first step in making coconut milk is to grate the flesh of a coconut and squeeze out the water. Then you mix this with water and allow it to sit for several hours until it separates into two layers: a layer of fat on top and a layer of liquid underneath. The fat layer is then drained off and used in cooking or baking.

Coconut Milk Brown Sugar Agar-Agar | MyKitchen101en

Ingredients:

  • 15 g agar-agar powder
  • 170 g sugar
  • 70 g brown sugar
  • ¾ tsp salt
  • 3 leaves pandan leaves
  • 1400 ml plain water
  • 1 egg
  • 220 ml fresh thick coconut milk

Instructions:

1 Add agar-agar powder, salt, sugar, and pandan leaves to plain water (NOT hot water) and mix well, then bring to a boil.

2 Reduce to MEDIUM heat and continue cooking until agar-agar powder has fully dissolved.

3 Beat the egg gently, then add to coconut milk and mix well.

4 Reduce to LOW heat, add in coconut milk-egg mixture gradually, and keep stirring while adding.

5 Bring to the boil again, then OFF the heat.

6 Pour the coconut milk brown sugar agar-agar mixture into a square or rectangle mold (with a 2-liter capacity), and set aside to cool completely.

7 When cooled, cover with aluminum foil (or cling wrap) and chill for a few hours until Coconut Milk Brown Sugar Agar-Agar has fully set.
