One way to salvage stale bread and extend its shelf life is to turn them into bread crackers (roti Kok). No waste of food and never get stuck with leftover bread again.

Best serve with hot coffee or tea, they taste great and it doesn’t get simpler than this.

Bread Rusk

Bread rusk is a  twice-baked bread and a good way to use up leftover bread in many cultures. If you have some stale bread lying around, you can transform it into a tasty snack by toasting it until golden on both sides and then sprinkling it with cinnamon sugar or topping it with jam. Here’s our strawberry jam for you to try.

They were once commonly used in Europe as traveling food and were often sold as souvenirs. They are also eaten in many European countries as a snack or dessert and around the world. The name “rusk” comes from the Dutch word roskam, which means “to dry out.”

This recipe is a version commonly sold in Malaysia for a cheap price and can be found in every corner of the country.

Tips:
Baking time may vary, and fresher bread takes a longer time to dry out, adjust accordingly. For extra crispy crackers, bake longer at a lower temperature.
