The flavour of durian flesh is rich and aromatic, it is suitable to be used to make creamy and delicious durian ice cream. This ice-cream recipe does not have whipping cream as its ingredient because personally I don’t like the strong milk flavor of whipping cream. Also, the strong milk flavor may affect the flavor of durian too.
It is replaced by custard which is made with egg yolks and milk. After the cooled durian custard is churned in an ice-cream machine, it will become smooth and creamy durian ice cream. If you don’t have an ice-cream machine, you may pour the custard into popsicle molds to make it into durian popsicles. However, the texture of popsicles is icier, not as creamy as durian ice cream.

Durian Ice Cream No Whipping Cream (with Ice-Cream Machine) | MyKitchen101en
Yield: 10 servings
Ingredients:
- 4 egg yolks
- 25 g icing sugar
- 2 ½ tsps cornstarch
- 700 ml full cream milk (no added sugar)
- 120 g condensed milk
- 250 g durian flesh
Instructions:
1 Whisk together icing sugar and egg yolks until thick and fluffy, add in cornstarch and mix well.
2 Mix together condensed milk and milk, then warm through over medium-low heat (DO NOT boil).
3 Gradually add in half of the warmed milk to egg yolk mixture, keep stirring while adding.
4 Combine egg yolk mixture with the remaining milk and mix well.
5 Stir the mixture over medium-low heat until boiling.
6 Reduce heat to low, continue stirring for 4-5 minutes until custard has thickened (can coat the back of a spoon).
7 Add in durian flesh and cook for another minute.
8 Sieve the durian custard, then set aside to cool.
9 When cooled, transfer to a container and chill for at least 6 hours (or freeze for 2 hours) until very cold.
10 Churn in an ice-cream maker for 40-45 minutes (you may put the ice-cream machine in a freezer bag if the room temperature is high to delay the melting of ice in ice-cream machine).
11 Transfer the soft ice-cream to a container and freeze for 7-8 hours for a firmer consistency. (If the ice-cream is too hard, leave it at room temperature for 5-10 minutes before serving.)
12 You may pour the durian custard into popsicle molds and freeze for at least 8 hours to make it into durian popsicles.
