This mouth-watering dish is a perfect combination of tender pork, dark soy sauce, and other simple ingredients.

Reminder:

  • Before cutting the meat, wash it first with water, then absorb excess water using kitchen towels.
  • It is recommended to cook this stir-fried meat on medium to medium-high heat. During cooking, when you need to add in other ingredient, try lower the heat of the stove first, increase the heat again after adding the ingredient. This will prevent the ingredients in the wok from burning.
  • During the 20 minutes of simmering, open the lid and give the meat a stir for 1-2 times.

Ingredients:

  • 500 g skinless pork belly
  • 2 ½ tbsps sugar
  • ¾ tsp fine salt
  • 1 tsp ground white pepper
  • 1 tbsp oyster sauce
  • 1 tbsp dark soy sauce
  • 2 tbsps cooking oil
  • 20 g garlic (chopped)
  • 120 g hot water

Directions:

1 Cut skinless pork belly into small thin slices. (Reminder: Rinse pork with water and dry with kitchen towels before cutting.)

2 Add sugar, salt, white pepper, oyster sauce and dark soy sauce to pork belly, mix well. Set aside to marinate for 15-20 minutes. (Reminder: You may marinate the pork in advance and freeze it for later cooking.)

3 Preheat cooking oil over medium heat in non-stick wok, then add in chopped garlic, cook until it is fragrant.

4 Put in marinated pork, cook until the outer layer is cooked. (Reminder: Lower the heat of the stove first before adding in meat to prevent the garlic in the wok from charring, return to higher heat after adding the meat. Spread the meat in a single layer, let the bottom cook first before turning over.)

5 Add in hot water, bring to the boil, reduce to medium-low heat, put on the lid and simmer for 20 minutes, until the meat is tender. (Reminder: Stir the meat 1-2 times in between cooking.)

6 After 20 minutes, turn to medium-high heat, cook until the sauce has dried up and oil is split, and the meat is shinny. Transfer the Stir-Fry Dark Soy Sauce Pork Belly to a dish, discard excess oil.
